A tasty lunch or light supper featuring the simple (and often overlooked) pantry staple of sardines.

'Hero Herb': Tarragon

In a bowl, add the softened butter to all the other ingredients.

Pile the sardine butter generously onto toast (rye bread works brilliantly). Then pop under a grill until brown and bubbly.

Serve with a small side salad and wedge of lemon.
