Okara Chocolate Cake

A rich, decadent cake with a food-waste twist — okara is a waste product that comes from making tofu … except it’s actually tasty and high in protein, perfect for cakes and baking. You could also use tofu if you can’t find okara.

Directions

  1. Preheat oven to 160°C . (fan forced)

  2. Melt chocolate with oil, sugar, and milk in a saucepan over low heat. Stir until smooth, then mix in okara, vanilla, and salt.

  3. Combine dry ingredients (flour, cocoa, baking powder) in a separate bowl.

  4. Mix wet and dry until just combined.

  5. Bake 25–30 minutes, or until a toothpick comes out with a few crumbs. Stores well in the fridge for ages, or freezes really well.
