Launceston eat’s it all | a community dinner fighting food waste

With our great friends — the Tasmanian University Student Association (TUSA) — we held our second community dinner, on a golden, sunny evening in March. Plenty was in season and our first dish, a green gazpacho, took care of the bushes of end of summer tomatoes. The onto main with bowls of delicious greens and spicy pilau and finally the lightest apple mouse you’ve ever tasted. The menu featured recipes, tips and techniques that celebrate and utilise every bit of produce … stalks, stems and especially the browning, bruised bits we love to throw away.
